Food preparation heating surface UWP1, manufactured by UAB “Novameta”, is a device intended to keep a certain tempreture of food and dishes, placed on it. Such devices are used in industrial professional kitchens. There is a problem when food preparation heating surface, mounted into kitchen desk’s tabletop, is being used: due to quite high working temperture – 85 °C, heated surfaces deform (incurve). It means that kitchen workers then have to work at a table with uneven heated surfaces, which is not only inconvenient but also unsafe. That’s why there is a need to research thermal deformation parameters of professional kitchen food preparation heating surface, when it is working on operational temperatures, and find a way to minimize thermal deformation. In order to achieve the aim, the requirements for the equipment used in professional kitchens are analyzed. An overview of the most commonly used food preparation heated surface heating methods, heating element types was performed. An analysis of the construction and operation of the food preparation heated surface UWP1 was carried out, components and used materials were described in details. A research stand was designed and experimental research of the temperature and thermal deformations of heating surface was performed. It has been determined what structure and design food preparation heated surface, being exposed to normal exploitation temperature, suffers the minimum and maximum deformations. A computational models of several different structure food preparation heated surfaces were developed; computations of temperature distribution and thermal deformations were performed using finite element method. The analysis of the results of experimental research and computational study was carried out. Based on the results of numerical simulation, the construction, assuring minimal thermal deformation for food preparation heated surface UWP1, was found. |
