Abstract [eng] Chitosan derivatives modified by phenolic acids were obtained treating different molar mass chitosan with appropriate amounts of chlorogenic and gallic acids. Using thermal analysis methods, it was determined that modifying different molar mass chitosan with gallic or chlorogenic acids hydrogen bonds were weakened in chitosan derivatives and thus the ability to bond hydrogen and the overall thermal stability weakened. It was determined that chitosan modified with phenolic acids has a prolonged antioxidative effect when compared to phenolic acids alone. Antibacterial features of different molar mass chitosan treated with chlorogenic and gallic acid were analyzed. It was determined that the molar mass of chitosan plays a role in its antibacterial effect and a low molecular mass chitosan exhibits a better bacteriocidic effect compared to an average molar mass chitosan. Chitosan antioxidative features were assayed by coating filter papers with different molecular mass chitosan modified with phenolic acids. The recommendation, for a manufacturing process by which a total of 177.1 kg of chitosan coating modified with phenolic acid can be obtained per day were prepared.
