The aim of the master's final project is to improve flavored spirit quality at the Alita factory of AB “MV GROUP Production”, solving main engineering and technological problems in distillation process. In order to achieve the goal, an assessment at the Alita factory of AB "MV GROUP Production" is being carried out, the method of introducing the botanical materials into the still is being changed, the production line of aromatic spirit intended for the production of gin is being modernized, by installing a new pump for liquids with solid particles, the distiller – aromatizer and the distillation process automation system. A review of the literature on the production technology and equipment of the gin category alcoholic beverages, an analysis of scientific research examining the composition of the flavored spirit intended for production is carried out. Using different methods of holding the head before distillation, introducing it into the stills, and using stills of different materials and construction, different samples of flavored spirits are produced. Sensory-analytical evaluation of distillates is carried out and according to the obtained results, using Aspen Plus V12 software, the proposed distiller - aromatizer is designed and the method of introduction of the headstock is selected. The production line of flavored spirit intended for the production of gin is designed, the quantities of raw materials are calculated, and updated technological equipment is selected. The construction solutions of AB "MV GROUP Production" Alita factory and the situation of the plot, the building where the distillation workshop is located are described. Financial and economic evaluation of the flavored spirit production modernization project of AB "MV GROUP Production" was carried out and efficiency determination, environmental assessment: energy resources and water consumption, generated waste, air pollution and generated wastewater. Occupational risk in the distillery was assessed, requirements for safe production and fire safety were described. The plot plan of AB "MV GROUP Production" Alita factory is drawn on the A1 format sheet, the first floor of the spirit production building is drawn on the A0 format sheet, and the section of the building (distillation workshop) is drawn on the A2 format sheet. |
