Abstract [eng] The purpose of the study was to create the coating with the synergetic essential oils mix for bread to replace the usual plastic package with an environmentally friendly and mold resistant option. Different mixtures efficiency was analyzed and compared. 3 pairs of essential oils containing citral-eugenol, citral-thymol and carvacrol-thymol were selected for the experiment part. 3 types of bread were compared and the most susceptible to fungi was selected for further studies. 3 coatings were made of divergent essential oils blend, containing the required concentration of constituent, and soy wax. These coatings were applied to the carton’s box inner surface for antifungal properties and reduced air permeability. Samples of bread were kept in 4 packages: an original plastic bag, paper box with one wall coating, all inner surface coating and without any coating. These packages were compared to each other by lost weight amount and textural parameters before and after storing. This was done to find out that the coating helps to retain moisture in the product. 2 layers of the coating were applied for the last part of the experiment where citral-thymol and carvacrol-thymol coatings were effective to inhibit mold activity. Coating without bending edges covered, accurate synergistic concentrations and sensory analysis performance should be considered as an opportunity for future research.
