In the master's thesis, diversification of the range of chicken semi-finished products at SC „Vilniaus paukštynas“ was designed by installing a 2 ton / shift capacity chicken skewers production line. After evaluating the company's production capacity and to ensure efficient operation, it is planned to purchase the missing equipment: an ice generator, a brine mixer, a vacuum massager and a skewering machine. The project envisages the production of chicken skewers with three different recipes, of which savoury chicken skewers will be produced in 0.4 t / shift, spicy skewers – in 0.9 t / shift, and chicken skewers with herbs – in 0.7 t / shift. Based on regulatory documents, the raw materials and excipients required for the production of these products are defined in detail, the characteristics of the product in question are given, the nutritional and energy values of the products are calculated and the labelling requirements are described. The stages and operations of the technological process of chicken skewers are examined and the physico-chemical and biochemical changes taking place during them are evaluated. A technological process quality and safety control plan has been drawn up and the indicators to be controlled during production have been described in accordance with the regulations. Taking into account the possible risk factors, the stages of packaging of semi-finished products and storage of packaged products have been identified as important control points in the production of chicken skewers. Calculations of raw materials, excipients and equipment were made, energy supply was described, health and safety of employees, occupational hygiene, fire safety were assessed, and preventive measures were selected. Construction solutions of the building are presented and financial-economic evaluation of the project is performed. A long-term loan of 116.16 thousand euros and the share capital of 141.98 thousand euros is planned for the implementation of the project. Estimated costs are distributed as follows: for the acquisition of fixed assets – 197.00 thousand euros, and for current assets – 61.14 thousand euros. The project was found to be economically viable as the estimated payback period is 1.49 years. A detailed analysis of the scientific and technical literature was made during which protein-stabilized edible films and their use in foodstuffs were examined. The thesis evaluates the properties and functions of these films, describes their types, production methods and areas of application. Innovative solutions and possible ways of their application in production are proposed. The graphic part of the final work presents a scheme of the technological process of chicken skewers production, graphically illustrates the plan of the company's land plot, the plan of the building and sectional arrangement of the production premises. |
