Abstract [eng] |
The aim of this paper was briefly to review the studies on the properties of Listeria monocytogenes (the causative agent of listeriosis), prevalence of this microorganism in raw and cold-smoked fish, impact of processing operations, such as freezing, salting and smoking on the survival and growth of Listeria monocytogenes. The growth inhibitory effect of frozen storage, modified atmosphere – packing, addition of preservatives and salts of organic acids, as well as use of bacteriocins and bacteriocin-producing bacteria was discussed. |
