Abstract [eng] |
The aim of this study was to investigate and motivate the influence of the geographical origin on the physical chemical characteristics of Emmental type cheeses. The comparison of physical chemical properties of the Emmental cheeses from different European countries showed that the cheeses differ in mineral composition (Na, Mn), organic acids (L-glutamic acid, L-and D-lactic acid) content and the ratios of these isomers. IR and fluorescence spectroscopic assay can be considered as a suitable technique for the reliable separation of he Lithuanian Emmental cheeses and the same type cheeses from other geographical regions. A better classification was obtained from fluorescence spectroscopy coupled with discriminant analysis. |
