Abstract [eng] The oil blends balanced by n-6 and n-3 fatty acids and containing different ratios of mixed oils (rapeseed-olive (6:4), rapeseed-flaxseed (9.9:0.1), rapeseed-soybean (8:2), rapeseed-corn (8:2), rapeseed-sunflower (9:1) were prepared and investigated. The results of oxidative stability by measurements of induction period showed that the blend of rapeseed-olive and rapeseed-flaxseed are the most stable, and the blend of rapeseed-sunflower, the most unstable. The oil blends presented Newtonian behaviour, and the values of the consistency index dependent on temperature (20–60 ºC) varied in 0.09–0.03 Pa•sn range. Investigation of the sensory attributes of the rapeseed oil and oil blends showed major changes during the storage at 60 ºC in the overall intensity of taste and odour, thickness and heaviness of odour, intensity of odour and taste of roasted seeds and nuts. The rapeseed-olive blend exhibited the most intensive sensory attributes, while the rapeseed-flaxseed blend the weakest. The intensity of overall odour, thickness and heaviness of odour, fishy and fish oil odour and taste, bitter taste and bitter aftertaste of the oil blends strengthened during storage at 60 ºC .
