Preparation of the meal in commercial kitchens can cause great amounts of heat, water vapor, smoke and grease. The amount of grease released during cooking process depends on the type of equipment, the temperature and the product that is heat-treated. Grease particle filtering is a very important feature. It is designed to keep the fat in the ventilation duct (pipe) and the chimney not overheated. Due to this function, a large amount of grease and vapor is removed, and the pipes of the ventilation system remain clean and free of contamination. In this work was analyzed the functional properties of the filter elements of the industrial vapor collectors: fire protection, i.e. the ability of the filter to prevent flames from entering the exhaust hood and ventilation ducts; Grease fragmentation effectiveness; the ability of the filter to resist the flow of air through it, i.e. induction of pressure in the ventilation system. In accordance with F2519 and prEN 16282-6 standards, a test stand was constructed and a fatty acid retention efficiency test was performed. The calculated model of the investigated object was created, and the functional properties of the filter element were analyzed. The results of the comparative study and the calculated model are analyzed. New constituents of fat filters have been created and a solid-state particle retention efficiency study has been carried out for all filters. |
