Abstract [eng] The study is devoted to the problem of the texture estimation of cereal products when analyzing the process of lying with the help of acoustic technique. Baker's goods of various quality produced in the "Kauno duona" enterprise were taken as the object of investigation. A special measuring test bed (cuvette with liquid where the sample with a frame was placed) and acoustic nonimpact level gauge had been constructed for the experiment. [...].
