In industrial processes for freezing food products, the aim is to freeze the food to a predetermined temperature (setpoint value). In industry, large quantities of product are frozen in spiral conveyor freezers. An engineering problem in controlling the freezing process of such a large-scale system is selecting control signals that would ensure that the frozen object reaches the setpoint temperature at the end of the conveyor, while also operating in an energy-efficient mode. The paper describes thermal and geometrical characteristics of the spiral freezer and the frozen food product - ice cream. Temperature dynamics of the freezing process were identified through measurements taken in the spiral conveyor freezer. A mathematical model was developed in the study to estimate the temperature of the frozen product as it moves through the industrial spiral freezer. The heat transfer coefficient was identified and selected. A software optimization method was developed to select control signals (freezing recipes) aimed at freezing various food products in the spiral freezer. |
