| Abstract [eng] |
The work analyses a relevant problem – team building and its preparation for operation in fast-food restaurants, preparing and forming these teams for autonomous work in the context of separate restaurant operation, at the same time seeking to create a united team in the whole fast-food restaurant chain. The work includes a detailed presentation on fast-food restaurant operation, reviews the origins of this type of catering as a branch of business, as well as the nuanced aspects of its establishment and general, as well as targeted, development. The concept of team is analysed in detail as well as its possible types, dividing them into functional, self-governing and inter-functional teams. Special attention is drawn to team building, as the most important component in the subject of this work, analysing in more detail the stages of team building, as well as the factors influencing, or having the potential to influence, its operational efficiency. This analysis has been performed in the context of a general theoretical analysis, as well as the context of fast-food restaurant operation, presenting a possible principal structure for fast-food restaurant chain team building. The work also analyses the essence of team strengthening and concentration, as well as the ways and possible means of implementing these processes, at the same time discussing their essence, implementation specifics and usefulness of application to team operation. Based on performed empirical study, managers of various companies and organisations have been surveyed, which allowed for a comparison between the results of the theoretical analysis and the opinion of managers of different levels and varied practical experience. This provided the required conditions to prepare a fast-food restaurant chain team building model, which could also be applied in companies performing other activities, solving issues of team building and influencing their operation. |
